Tomato-Basil Pasta

Ingredients

8 oz pasta (angel hair), cooked and drained

1/4 cup olive oil (or wine) 1 small onion, very finely chopped (or 2 T minced green onion)
4 cloves, garlic- pressed 4 cups tomatoes, diced (must be FRESH)
1/2 t salt 1/2 t pepper
1/4 cup basil, chopped (must be FRESH)

Optional

2 cups garbanzos (cooked and drained) 1/2 t salt (if garbanzos are unsalted)

Directions

While pasta is cooking, dice tomatoes and onions. When pasta is cooked, pour it into a strainer.

Combine onion, garlic and olive oil in pasta cooking pot and cook until soft (about 2 minutes). Remove from heat and add remaining ingredients, then return drained pasta to pot. Gently toss ingredients together.

Notes

Tomatoes and basil MUST be fresh. I usually use whole wheat angel hair pasta (cooked for 6 minutes).
