Garden Vegetable Spaghetti Sauce

Ingredients

1/4 - 1/2 cup olive oil 1/4 - 1/2 cup red wine
1 onion, chopped 2 cloves garlic, pressed
1 cup mushrooms, sliced 1-2 carrots, chopped or in thin slices (about 1 cup)
1 zucchini, halved and sliced 1/2 cup broccoli chopped (frozen is OK)
1 red or green pepper, chopped 16 oz can tomatoes, chopped
12 oz can tomato paste 2 cups water
2 t oregano 2 t basil (or 1 T fresh)
1 t salt 1/2 t pepper

Directions

In a large saucepan, heat oil and wine till bubbling. Sauté onions and then add other veggies. Cook about 3-5 minutes. Add spices, tomatoes, tomato paste and water. Bring to a boil, then lower heat. Simmer, uncovered, about 20-30 minutes. Stir occasionally. Serve over cooked pasta.
