Pumpkin Muffins
Ingredients
1 1/4 cup oats 1/2 cup oat bran (or 1/4 cup oats and 1/4 cup flour) 1 cup flour (whole wheat) 2 t cinnamon 1 t baking soda 1/4 t salt 1 t baking powder 1t (ground) ginger 1/2 t (ground) cloves
3/4 cup raisins 2 T dry milk (powder) 16 oz can pumpkin 1 t Egg Replacer (powder) 1/2 cup brown sugar 1/4 cup water 1/4 cup walnuts, chopped 2 t vanilla Directions
Preheat oven to 400. Lightly grease 12 muffin tins (or line with paper cups). Combine dry ingredients. Add remaining ingredients. Spread evenly. Bake muffins about 15 minutes until light brown.
