Spanish Rice and Beans
Ingredients
1/4 - 1/2 cup red wine or olive oil 2 med. onions, chopped 4 cloves garlic, pressed 2 cups brown rice (uncooked) 4 cups water 1 green pepper, chopped 32 oz tomatoes, chopped 1 T chili powder 1 t marjoram leaves 1 t salt 3/4 t cayenne pepper 2 cups beans (black or pinto) cilantro (optional) Directions
Sauté onions and garlic in wine or olive oil. Add all other ingredients. Bring to a boil. Cover and reduce heat to low. Let cook for 45 minutes. Garnish with chopped cilantro if desired.
