Meatloaf

Ingredients

1 1/2 cups SoSoya (ground) 1 cup oats
1 t pepper 2 eggs (or 1 T Ener-G egg replacer + 1/4 cup olive oil)
2 cups water 1/4 cup olive oil
1 T mustard 1 T Worcestershire
1/2 cup catsup 1 onion, chopped fine

Directions

Mix all ingredients in dish casserole (mix dry ingredients first). Microwave (covered) on high 20 minutes and let set 5 minutes.

Or bake in oven at about 350 for 30-45 minutes.

Notes

SoSoya is a sodium and fat free meat substitute. It's not easy to find but worth it! We order ours online at www.so-soya.com.

If use frozen veggie "ground beef" use 2 cups ground "beef", 1 cup water and omit 1/4 cup olive oil and cook for 15 minutes.
