Hearty Oat and Corn Muffins (or Bread)

Ingredients

1/2 cup flour (blend) 1 cup cornmeal
1 T baking powder 1/4 t salt
2 T sugar 1 cup oats
2 egg whites (or 1T egg replacer + 1/4 cup water) 1 T oil (optional)
1 1/2 cups milk 1/2 cup frozen corn, thawed
2 T chopped onion

Directions

Preheat oven to 425. Lightly grease 12 muffin tins or 8-9" inch square baking pan.

Combine dry ingredients. Add remaining ingredients. Spread evenly.

Bake muffins about 15 minutes until light brown (pan takes 20-25 minutes).

Notes

This recipe is from a Quaker Oat's ad in Better Homes and Gardens.

Can be cooked in microwave in 8" square pan at medium/low 6 minutes, turn at 3 minutes. Cook until center is set. Let stand 5 minutes. (I've never actually tried this.)
