Chili
Ingredients
1/4 - 1/2 cup olive oil 2 onion, chopped 1 green pepper, chopped 2 stalks celery, chopped 2-4 cloves garlic, pressed 1 1/2 cups ground SoSoya (or other meat substitute and reduce water to 4 cups) 5 1/2 cups water 3 T chili powder 2 t salt 1 t pepper 28 oz. can chopped tomatoes 1 T Tabasco sauce 6 oz. can tomato paste 4 cups kidney bean (precooked) Directions
Stove: Sauté onions and other veggies in olive oil. Add all other ingredients. Bring to a boil, reduce heat and simmer for 1 1/2 to 2 hours.
Notes
SoSoya is a sodium and fat free meat substitute. It's not easy to find but worth it! We order ours online at www.so-soya.com. If you use frozen or other hydrated meat substitute reduce water to 4 cups.
