Baked Beans

Ingredients

2 cups dry great northern beans

1/4 cup olive oil 2-3 onions, chopped
4 cloves garlic, pressed 2-3 cups mushrooms cut in pieces
2 cups tomatoes (diced) 2 cups water
20 dried tomatoes, cut up into pieces 3 oz tomato paste (1/2 can)
1 t dry mustard 1 t tumeric
1/4 t cayenne pepper 1 t salt
1/2 t pepper 1 t liquid smoke
2 T molasses (black strap)

2 t white vinegar 1/4 cup brown sugar
1 T prepared mustard

Directions

Rinse beans and soak in water over night (or bring to boil and let sit a few hours). Drain. Saute onions, garlic and mushrooms in olive oil in pressure cooker without lid. Add all ingredients except vinegar, brown sugar and mustard. Cover and bring to pressure. Cook at pressure 30 minutes. Run pan under water to release pressure. Add vinegar, brown sugar and mustard let sit about 15 minutes.
