Two Potato Soup

Ingredients

1/4-1/2 cup olive oil and/or water 1 onion, chopped
2 stalks celery, with leaves, chopped 2 carrots, chopped
1-2 sweet potatoes, diced small 4-5 white potatoes, diced small
2 t salt 1/2 t pepper
1 T Vegit water (to cover plus about 2 inches)

Optional

2 cups SoSoya slices 1/2 T Vegit (additional)

Directions

Sauté onions, celery and carrots in water or olive oil until tender (about 5 minutes). Add all other ingredients. Bring to a boil, reduce heat, simmer about 20 minutes - till potatoes are soft.

Notes

Do NOT freeze (the potatoes end up a very strange texture). This recipe is very loosely based on one from Vegetarian Times. It tastes particularly good when you're sick.

Vegit is a combination of spices and can be found in just about any health food store.
