Black Eyed Peas

Ingredients

1 1/2 cups dry black eyed peas (soaked overnight)

1/4 - 1/2 cup olive oil 2 onions, chopped
4 cloves garlic, pressed 2-3 stalks celery, chopped
1/2 cup brown rice (uncooked) 1/2 t red pepper flakes
1 t salt 4 cups water
cilantro, chopped (optional)

Directions

Soak peas in water overnight (or at least for several hours). Drain. Saute onion, garlic and celery. Add remaining ingredients (except cilantro). Bring to simmer. Cover and cook 45 minutes or so. Add cilantro.
