Pasta with Zucchini

Ingredients

2 cups Brown rice penne (uncooked) 1/4 - 1/2 cup Olive oil
2 onions, chopped 4 cloves garlic, pressed
2 zucchini, chopped 2 yellow squash, chopped
1 t salt 1-2 t crushed red chili pepper
2 cups garbanzos (cooked)

Directions

Cook penne (6 minutes).

Saute onions, garlic, zucchini and yellow squash in olive oil until done (about 10 minutes). Add salt and chili pepper as it's cooking. Add garbanzos and cooked pasta and heat about 5 more minutes.

Developed this recipe while Fred was on an elimination diet where he couldn't have wheat. You can find the brown rice penne in most health food stores.
