Egg salad

Ingredients

2 cups pinto beans, cooked (or 10 oz tofu chopped) 1/2 small onion, chopped
2 stalks celery, chopped fine 1 red pepper, chopped fine

Dressing

2 T olive oil 1 T tahini
1 T mustard 1/2 t turmeric
1/2 t salt 1/4 t pepper
sprinkle basil 1/8 t celery seed

Directions

Mix together dressing. Mix together all ingredients. Chill.

Notes

Very loosely based on a recipe on the back of Mori-Nu Tofu.

Good on whole wheat toast.
