Orange Couscous Salad

Ingredients

1 1/2 cups whole wheat couscous (1 pkg) 1 t turmeric
1 t salt 1/2 t pepper
2 cups boiling water

4 cups cooked chickpeas 1 cup canned mandarin oranges, drained
1 small onion, chopped fine 1/2 cup raisins
1/4 - 1/2 cup olive oil 1/4 cup lemon juice

Directions

Add boiling water to couscous, turmeric and salt and pepper. Let stand at least 5 minutes. Mix all ingredients. Chill at least one hour.
