Corn Muffins
Ingredients
1 cup yellow cornmeal 1 cup flour (whole wheat) 1/4 cup sugar 1/2 t salt 4 t baking powder 2 eggs (or 1T egg replace + 1/4 cup water or olive oil) 1 1/2 cups milk (or 3T soy quik + 1 1/2 cups water)) 1/4 cup oil (olive oil) Directions
Preheat oven to 425. Mix dry ingredients, add egg, milk, oil. Mix by hand until smooth. Bake in greased muffin tins for about 25 minutes.
